Prawn chilly fry

Ingredients:

  • 12 kg. prawns, medium -sized, shelled and deveined
  • 3 onions, medium, sliced
  • 2 tomatoes, medium, sliced
  • 4 green chillies, slit in half
  • 1 tsp. ginger, chopped
  • 2 tsp. garlic, chopped
  • 12 tsp. red kashmir chilli powder
  • 12 tsp. coriander powder
  • 12 tsp. cumin powder
  • 12 tsp garam masala powder
  • 14 tsp turmeric powder
  • 2 tbsp. lemon juice
  • salt, to taste
  • 3 tbsp, coriander leaves, chopped
  • 15 green curry leaves
  • 4 tbsp oil

Method:

Marinate prawns with red chilly and turmeric powder and 1 tablespoon of lemon juice. Mix well and keep aside for 30 minutes.

In a wok on medium heat, add oil. When hot, add the curry leaves and green chilies; sauté with chopped ginger, garlic. Add onions until they turn soft and transparent. Then add tomatoes and sauté until soft. Add all of the remaining spices (except garam masala) and salt and mix well. When the oil separates from the paste, add the marinated prawns and mix. Cover with the lid for five minutes.

Finally garnish with the remaining lemon juice, garam masala and coriander leaves mix and serve.
