Maiche kaleez kodi (liver curry)
Ingredients:
For the cooker:
- 1 kg, sheep liver, lungs and heart, cut in cubes
- 2 medium sized onions, sliced
- 1 medium-sized tomato, sliced
- 1⁄2” ginger, chopped
- 9 garlic cloves, sliced
- 2 green chillis, slit in half
- 5 cloves
- 7 black pepper corns
- 2 cinnamon sticks, small
- 1 bay leaf
- 2 tbsp vinegar
- salt
For the paste:
- 1 onion, large
- 1 tomato, large
- 1⁄2” ginger piece
- 5 garlic cloves
- 1 green chilly
- 2 tsp red chilly powder
- 2 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp turmeric powder
- 2 tbsp coconut powder
- 3 cloves
- 2 cinnamon stick, small
Method:
Grind together all ingredients for the paste with some water. Add the ground paste to the cooker along with the ingredients for the cooker and use your hand to mix the cuttings till the onions and tomatoes are soft. Now add the cut liver, lungs, heart and mix well.
Add salt and vinegar as per taste. Add 1 cup water, close the cooker and let the liver cook for seven whistles (N.B. You may add potatoes to this dish, if you like some volume).
